Trippa alla Romana, Pasta e Ceci, Cozze alla Tarantina
Stewed tripe, pasta with chickpeas, and mussels in red sauce
Here is a second email this month with three recipes that are my absolute favorite dishes. Dishes that bring specific memories. A bowl of pasta e ceci is creamy and herbal, perfect for when the temps drop. The flavor develops with each bite. Trippa alla Romana is decadent and warming. You’ll need to eat it with good bread. It’s a very easy dish to make. Lastly is mussels in red sauce. If you watched my stories on Thanksgiving you saw that I opted for this. I made so much duck and chestnut puree for friends earlier this month that I had to eat something else. I posted this mussels dish last year and it’s a tribute to a restaurant in Tricase Porto. Mussels in the region of Salento, Italy are unbelievable delicious.
