Minestra Maritata is a staple winter soup. It’s origins are Naples, Italy by way of Spain. From Spain came “Olla Potrida” which is a soup that incorporates pork products. While in Italian this soup more-so references a marriage between meat and greens, in the US we have Italian Wedding Soup, commonly made with meatballs. The maritata recipe I am sharing is a mix of pork, chicken, and bitter winter greens. As always, I will list tools and ingredients before the method. I prefer to make this the night before so it can sit in the fridge overnight. I’ll explain why later on. This soup falls under cucina povera (peasant food). I utilized what I had access to both in the market and in my freezer. If you enjoy a roast pork hoagie with broccoli rabe, this soup is for you.
